Turkish Pide Bread

We've made this bread before however not for a long time so on the holidays James made it for us for lunch.  The dough is so fascinating as it's layers and layers of holes much different to the bread rolls we made.  We make ours in the Thermomix however I've linked to a recipe that you can make by hand here.  The bread is not hard to make and takes 3.5 hours from start to finish but more than 3 hrs of that is proving time eg with 5 minute steps to do then prove for 30 mins then do a step and prove for an hour etc.  Here is the Thermomix recipe and above I've linked to a normal recipe. 

INGREDIENTS

1 Tablespoon of dried yeast (ie 2 x 7 gms sachets)
1/2 Teaspoon caster sugar
125gms water
90gms Bakers Flour
250gms luke warm water
40gms extra virgin olive oil
390gms bakers flour
1 teaspoon salt
1 egg
25gms milk
Sesame seeds or Poppy Seeds

Note 1: Total Bakers Flour required 480gms (ie 90gms + 390gms)
Note 2: You can make 2 smaller loaves or 1 large one which we did.

METHOD

1. Place yeast, sugar and 125gms water into TM bowl.  Mix for 2 minutes at 37 degrees on speed 2.
2. Leave in bowl for 8 minutes until frothy.
3. Add 90gms bakers flour and mix for 1 minute at 50 degrees on speed 2. 
4. Leave in bowl approximately 30 minutes to form a "sponge".
5. Add remaining water, bakers flour, oil and salt to mixture. Combine for 10 seconds on speed 5.
6. Set dial to closed lid position and knead for 3 minutes on interval speed.
7. Spray large bowl with spray oil and some glad wrap spray with oil underneath and then place the sticky mixture into the large bowl and cover with the glad wrap.
8. Leave for 1 hour until doubled in size.
9. Turn oven on to preheat to 220 degrees c.
10.Remove glad wrap and knock air out of dough and shape it on a tray lined with baking paper.
11. Leave for 30 minutes.
12. Mix egg and milk in a cup and then brush the egg mixture on top.
13. Using your fingertips make deep indentations across and down the dough.
14. Sprinkle with sesame or poppy seeds.
15. Bake for 10-12 minutes until surface is crisp and golden brown.

I just love looking at this dough...it's so facinating.

Around Here

Week 1 of Term 2 is underway so it's back to routines.  Last week when we were on school holidays the kids and I went to our favourite bush BBQ location for a lunch time BBQ.  We keep it really simple with a packet of sausages, a loaf of bread, sauce and cut up onions in olive oil and a tablespoon of brown sugar so they carmelize.  We collect twigs and sticks to get the fire going and cook the sausages and onion first and then after we finishing eating it's time to roast some marshmallows over the fire.

While we were there I also took the opportunity to snap some family pics of the three of us.  With kids and photos you have to make these things fun so I set the camera up on the tripod with the remote and self timer to get our family photo.  The kids decided it would be fun to jump off the log in front of the camera just as the timer went off so we ended up with some funny photos and what's better is, they were having a heap of fun taking turns trying to jump into the photo.

Around Here

We don't eat out for dinner however I have been wanting to go to Eat Street for a while to try it out and since the kids are on holidays it was a special treat.  It was so busy and we queued to get into the car park and then queued to get into the venue and shuffled around behind people to walk around.  It was crazy busy and packed and very overwhelming in terms of "what are we going to eat".  After about half an hour wandering around the kids wanted to have a potato on a stick and had that and then afterwards we went to the Asian section and ordered a few entree type meals.  We got some dumplings, peking duck in little pancakes and honey chicken.  Tables were at a premium however we did find a little spot to sit down.  There are the most outrageous over the top deserts at a premium price and so much that one serving could feed a family.

On the way out we saw the fairy floss being made and stood there for about 10 minutes watching it.  As a kid we always got fairy floss at the local fete and it's still fun to have some every year or so.  The first fairy floss we saw being made was wrapped around a flashing lightsaber so that it was flashing pretty colours throughout the fairy floss.  The second one was being made like a sombrero and the guy who was getting it made he and his girlfriend were squealing with delight as each new bit of sugar was being poured into the spinner.  We stood in amazement at the performance of it being made and how huge it was when it was finished.  I doubt that anyone would eat all of it but it certainly was something to watch.  It's not a place I would visit often or ever again however if I had relatives visiting it's something that would be fun to go and do again because it's a bit different.  Basically it's shipping containers and food trucks on some unused land by the Brisbane River.  I'm glad that we went as a family and it was a treat and the fairy floss was something to remember.  Here's some photos of our night.

Around Here

Around here we are in the second week of the school holidays and chilling out.  One of the things I love doing with my daughter is going on a "photo walk" in our neighbourhood.  We both have a camera and we take a nice leisurely stroll down to the park and take photos along the way.  Usually it's about 30 minutes or however long we like.  Here's went about half an hour before sunset to get the pretty light.
